    Pistachio Salmon Nuggets

    My kids love this recipe (u throw in the word nuggets & they automatically like the dish)


    Pistachio Salmon Nuggets

    1 pound of fresh Salmon (skinless) fillets (about 1 inch thick)
    2 tablespoons water
    2 tablespoons reduced-sodium soy sauce
    1 tablespoon grated fresh ginger
    2 tablespoons toasted sesame oil
    2 tablespoon vegetabe oil
    2 tablespoons finely chopped pistachio nuts
    Steamed fresh sparagus (optional
    )

    Pat fish with dry paper towel. Cut fish into 1 inch chunks. Place fish in a Ziploc plastic bag, set aside.

    For marinade: in a bowl, combine the watter, soy sauce, ginger, and 2 tablespoons sesame oil or vegetable oil. Pour marinade over salmon chunks to coat salmon marinade in refrigerator for at least 30 min. (turning bag ocationally)

    Drain Salmon, In a large skillet, heat 1 tablespoon vegetable oil (med heat) add half of the salmon chunks, cook and gently stir for about 6 to 8 min (until fish flakes easily with a fork)
    Remove from skillet & set aside, cook remaining salmon chunks.
    Springle with pistahio nuts before serving & serve with steamed asparagus.

    Makes around 4 servings

    Damn that sounds good... This looks like a terrific Keto Recipe if you up the sesame oil a bit... Maybe a quick drizzle on the plate.
