Enter Butternut squash. Most people tend to boil it - but there is something much better you can do, and believe me, it tastes so good you'll be surprised - Roast it.

Get one Butternut squash, take off the rind and cube into about inch cubes.

Pre heat oven to 435 degrees F. It has to be at least this hot.

In a roasting pan (preferably a black one as they crisp things up better), add some oil - not too much, but enough that you will be able to toss the pumpkin cubes in it. If oil is covering the entire bottom of the pan that is too much. For now just put the oil in the pan and put the pan in the oven to preheat the oil. You want the oil hot.

Pretoss the butternut squash cubes in some extra oil and salt. Leave aside.

Once the pan & oil is hot, add in the butternut squash cubes. The oil should be hot enough to start searing the squash right away. It is important that there is not too much oil or the squash wont crisp up nicely. With too much oil it tends to boil and get stodge.

Roast for 25 minutes, take out and turn cubes - use tongs or a flat "egg scraper". You want to get another side of the cubes facing down so that it too can brown up.

Roast for another 25 minutes.

Take out and make sure its done. You want something that is crispy on the outside. If only a few sides are crispy thats fine. It will still taste awesome.

Squash is such an underused veggie. Its full of awesome minerals, its carbs are good, sugar is low and it tastes divine. Its great with a steak, salmon or chicken. Just dont boil it :)
