Most people like chocolate because it has something for everyone. It can be bitter, sweet, salty... So if you have the right chocolate you can highlight parts of it. For example, the salty bit by using bacon.

ive made bacon from raw pork , cured it and then smoked it on the smoker. the belly / fatty part is classic bacon but its also very good done with tenderloin but cured like bacon.
