That's far too risky in my opinion. To have fun with an escort requires planning and a review site like TER. Don't take it lightly. Newbies get busted all the time. It's not difficult to protect yourself but in can dangerous on many levels. Last time I was there was in 2002. Like someone else previously mentioned, they are everywhere in Vegas. On the streets there are people handing out flyers, and if I recall I think they were called "tappers" or "clappers" or something like that, because it's against the law for them to talk to the tourist. So to get the tourist attention as you're walking by, they smack the stack of cards they're holding. These cards will have pics and phone numbers of escort girls on them. In addition, don't be surprised if you're approached by a chick in a casino. They will be discreet because if the pit bosses see them they will be asked to leave just don't be surprised if you're talking to a chick and she belts out an amount for a date. Most of the hotels will have a nightclub in them. Check those out and try and find a group of girls in from out of town, there are usually a couple that want to live up to the "what happens in Vegas stays in Vegas" motto.
