This is my home made pasta recipe, I made this this weekend, it was sooooo good, nothing beats home made pasta, it's worth it & super easy.
This recipe yields about a pound of pasta.
Ingredients:
2 1/4 to 2 1/3 cup AP flour (you can always add flour, but not take it out, so even though we started with 2 1/3 cups, it may be better to start with 2 1/4 and then add a bit more latter if it seems too sticky.
2 large eggs
1 tsp salt
1 tbl olive oil
1/3 cup water
Directions:
Pour the flour on a clean flat surface, make a well.
Put salt & oil into the center of the well, crack the eggs into the center of the well, with a fork very carefully beat the eggs (without destrying the walls of the well) (for abut 1-2 min).
Add the last ingredient, water.
Stir slowly with the fork & incorporate the flour with the wet center of the well, about a teaspoon of flour at a time, the flour will start to resemble a cake batter.
Once it's managable & thick enough, use your hands to incorporate the rest of the flour.
Start kneading the dough for about 5-7 min (u want something soft & elastic, not sticky)
Form the dough into a ball & cover with a bowl, let it rest for 20 min.
After the dough has rested cut into 1/2 inch slices & start rolling it out to a rectangle shape.
You'll have about 4 rectangles.
Once it's all rolled out thin, u fold each rectangle over & over into a small square, u can use a pizza cutter or a sharp knife to cut your pasta.
U want to cut strips (not too thin) & unroll the strips & place in a flat surface to dry.
Once all the pasta is cut place it to dry for at least 2 hours.
Once dry, your pasta is ready to cook.

And we had it with home made meat balls & tomato sauce... yummy !
